    Default What is your traditional family Thanksgiving recipes

    My Mom made a sweet potato souffle every Holiday, but she never measured ingrediants. I always remembered what she put in it and it always turns out.

    2-3 sweet potato's buttered and baked in the oven whole
    sugar to your taste
    vanilla
    1 can of evaporated milk
    can use cinnamon or any other spices you like
    2 eggs beaten
    chopped pecans

    Cool potato's and peel. Mash in a bowl add sugar, vanilla, milk and eggs beaten and any other spices you like, add pecans. Mix with a beater until smooth and pour into a 9X13 greased pan or glass casserole. Bake at 350 degrees until set (like pumpkin pie). Some people put marshmallows on top and put under broiler until browned when done baking.

    Green bean casserole: green beans (1-2 cans), cream of mushroom soup (1 can), 1 container of fried onions....combine, add some garlic salt for added flavor (Mmm, garlic), and put in oven at 325 for about 30 minutes or until hot. The onions should be on the top only, while the green beans and soup are mixed. I am not sure about adding water, I would venture to buy the pre-mixed soup, you know...no water added version. Spice it up with some bacon bits or homemade bacon bits for an added treat to the dish. Mmmm...yummy.

    My Daughter loves that. The recipe is on the can of the onions and you use like a half a can of milk or something like that.

    My problem is I love so many different dishes. When I don't control myself, I'll have about 30 items on the menu. No kidding. We could literally eat TG for a month, just in leftovers. Yum! So great to pull out a turkey sandwich..

    And my dessert tables used to be the same. But that was when I had a house full.
    I'm trying to tone it down these days, and it's just not as much fun. LOL

    A new one that I like is a cranberry relish. I've made it three years in a row now, and offer it along with the usual cranberry sauce (With berries whole in it). It is soooooo good. It's better when you let the flavors marry in the fridge, so you make it a few days before. Delish! But so far, no one likes it as much as I do. They are too used to the canned sauce.

    This one is very quick and simple to make:

    CRANBERRY RELISH WITH GINGER

    1 orange, whole with peel, scrubbed and cut in chunks
    24 oz fresh cranberries
    1 1/2 cups sugar (want to try brown sugar)
    1/3 cup peeled and finely chopped fresh ginger root

    Pulse all together in food processor until finely chopped to relish consistancy, and chill for several days before serving. Serve at room temperature.

    With 3 diabetics in the family, I've had to rethink some of my recipes. For instance, the sweet potatoes. I always layered them in a casserole dish with butter and brown sugar and popped them into the oven for 30 minutes. Then I topped them with marshmallows and browned the topping. Last year, I used a Splenda/brown sugar mix and left off the marshmallows. This year I plan on doing the same thing with an addition of pecans.

    I also always bake a ham and roast a turkey with dressing, serve mashed potatoes, cranberry sauce, dinner rolls and let evryone else bring other dishes

    Default Mashed Sweet Potatoes

    2 medium sweet potatoes, peeled and cut into 2-inch chunks
    1/2 cup half-and-half
    3 tablespoons butter
    2 tablespoons light-brown sugar
    Coarse salt and ground pepper
    Directions
    1.Set a steamer basket in a large saucepan. Fill with enough water to come just below basket; bring to a boil, then reduce to a gentle simmer. Place sweet potatoes in steamer basket and cover; steam until tender, 15 to 25 minutes. Drain, and return to saucepan.
    2.Meanwhile, in a small saucepan, bring half-and-half, butter, and brown sugar to a simmer, stirring to combine; remove from heat. Add to drained sweet potatoes, and mash just until smooth; season with salt and pepper


    And dont' forget the Roast turkey brine in salt solution for 24hrs best turkey ever! the only way to eat it. We also useually simmer Spiced mulled cider in the coffee pot thoughout the day for the added effect of smell aroma and something warm to drink.

    Turkey and dressing with cranberry sauce, greenbean cassarole, asparagus cassarole, sweet potatoe pie, turnip or collard greens. Dessert, Heavenly hash, Mandarin orange cake, pecan pie oh cant forget Deviled eggs and rolls. MMMM makin me hongrey just talkin about it!!! Cant wait!! Its the only time of year I can enjoy my moms cooking! Shes the best cook in the family. Oh I forgot the Tatersalad!

    We also have cheesy brocolli casserole. Use mushroom soup, dried onions, a tad of mayo or miracle whip, a bit of milk. Mix together add cheese and mx in the partially cooked brocolli and throw in a casserole in the oven and cook until heated through and cheese is melted.

    Home made Savory Stuffing - my great grandmother and grandmother's recipe:

    4-6 cups of dried bread cubes - (we like to take the heels of bread (rye, white, wheat, etc . . . cut them up to cubes, dry them and save them throughout the year)

    Put bread cubes in large bowl.

    Moisten bread cubes with warm water (I use sprayer from the sink) tossing bread cubes continuously until all are slightly moist. Also, at this time - 1/2 cup of melted butter - after moistening the bread cubes, continue to toss and add melted butter.

    In small bowl mix three teaspoons of dried sage, three teaspoons of powdered chicken soup base*, two teaspoons of poultry seasoning, one teaspoon of thyme and 1/2 teaspoon of freshly ground black pepper.

    Toss moistened bread cubes with seasoning mix

    In another small bowl, finely mince one small apple (tart firm apple if possible - like a granny smith), one medium onion and one interior rib of celery (about 8 inches - including leafy top)

    Again, toss bread cubes with the apples, onion, and celery

    Loosely stuff cavity of turkey with mixture - place rest of stuffing on tin foil (with small hole punctured into foil) just outside the cavity in the roasting pan.

    Baste stuffing occasionally (not too much or you will get mush) during roasting process. Cover exterior stuffing if you see it getting too brown (usually happens the last few hours of roasting . . . roasting time for our family is from approx 5:00 am to 2:00 pm.)

    *My great grandmother and grandmother use to boil a chicken, reduce the pot liquor to about a cup or two of liquid and used this to moisten the bread cubes - the soup base is an approximation.
