  • Chicken Pasta Salad

    Making this for a reunion today. It's pretty yummy:

    Sautee 2 chicken breasts in olive oil, sprinkle lightly with garlic salt & mesquite seasoning and cook through. Cool & cut into cubes.

    While chicken is cooking, cook +in salted boiling water 1/2# bow tie pasta el dente, drain & rinse with cold water until completely cooled. Don't overcook pasta - that is close to sinful!
    When fully drained, sprinkle lightly with olive oil and toss to coat.

    In large salad bowl, mix 1 cup Marzettis ranch dressing with 1/3 cup sour cream. Add 1/2 cup chopped celery and 1/2 of a small onion, chopped.

    Toss pasta into dressing, add chicken and 2 cups of chopped romaine lettuce. Add Cherry tomatoes if desired. Serve immediately. It's a meal in a salad bowl and very simple!


    If salad is too 'dry', just add more ranch dressing to taste.
    This salad does not store well once it has been mixed because the lettuce will get wilty after a while of course and the pasta will absorb all the dressing so only mix up as much as you want to eat. Once the pasta has been tossed with oil, it will keep covered in the refrigerator and you can mix up smaller amounts at a time if desired.

    This sounds wonderful !
    Substituting the ranch and sour cream for the ususal Miracle Whip/mayo makes it special...
    ...I think I'm just partial to sour cream!
